Can I get of and explore a city on the way to my final destination?

I would like to go from my hotel in Bern to my hotel in Grindelwald, but when we get to Interlaken, I would like to leave our luggage in the lockers, and take a train to and from Lauterbrunnen to explore for a few hours.

If I buy a point to point ticket from Bern to Grindelwald, are we able to leave the station at Interlaken and get back on the train later to Grindelwald?

Yes, it is possible with a point-to-point ticket, but Lauterbrunnen itself is not very interessant, unless you plan to see something in the surroundings.

The fastest route from Lauterbrunnen to Grindelwald does not pass through Interlaken.
What you should do is buy a ticket Bern - Grindelwald via Lauterbrunnen. Then leave your luggage in Lauterbrunnen, have a look around, then pick up your luggage and travel to Grindelwald.
