Even if the GE would be operating that day, this would still mean 6 ‘self-inflicted’ train transfers at railway stations with your luggage. No GE operating means only one additional transfer in Disentis. So since you appear to hate the idea of changing trains with luggage, there’s apparently no reason insisting on that substantial detour route with roughly 9h total travel time. You wouldn’t see any glaciers from the GE anyway. 🙂
Some of the fastest, most direct connections between Appenzell and Grindelwald are involving just 3 transfers, but that’s maybe not the most scenic route.
So a ‘reasonable’ compromise between both extremes might be via Lucerne, which (if leaving at xx:00, taking 5h40 in total) is still possible with just 4 transfers, despite of the replacement bus between Meiringen and Interlaken.
